The Perciasacchi is a typical Sicilian wheat, of ancient origins, similar to khorasan: it owes its name to the pointed shape that pierced the jute sacks where it was kept It has not undergone genetic manipulation, thus maintaining its main characteristic: it has a low gluten content, of the most fragile type. Stone milling and slow drying at low temperatures maintain all the nutritive principles in balance with the fibers: the result is a very digestible pasta suitable for low-glycemic diets.
