Mortadella is a grocer’s product made with pure pork meat, finely shredded, mixed with lard, lightly flavored with spices, stuffed and cooked.
Mortadella has a cylindrical or oval shape, pink in color and an intense, slightly spicy flavour.
For its preparation only fine cuts (high quality meat and lardels) are used, properly shredded in order to obtain a fine paste. The flavor is full and well-balanced. Once cut, the surface is velvety and uniformly bright pink. Mortadella gives off a particularly aromatic scent with a typical and delicate taste.
For a long time it has been defined as a poor, popular sausage, disparaged by haute cuisine, but in recent years it has redeemed its name thanks to its quality, it is an ingredient for many delicious recipes, including the typical Bologna tortellini.
