This particular cheese is produced with pasteurised whole cow’s milk and matured under wheat straw in natural stone rooms.
It presents a hard semi-cooked pasta with a sparse and small holes. The particular seasoning gives this cheese a particular hint of chestnuts and spices and if prolonged gives it a slight spicy taste.
Excellent with honey and jams. Very good with red wine.
