The nose of Piave Vecchio has latex notes of melted butter and firm vegetable scents accompanied by slight perceptions of dried fruit.
The taste is characterized by sweet and savory notes, less intense however of the shorter seasonings and with a greater gustatory persistence. The color is intense as well as the thickness and hardness of the crust.
Maturation over 6 months.

The weight of the product can vary by 15% depending on the drying, they are artisanal and the seasoning or cut varies its weight.
